Turkish cucumber yogurt dip is super quick to make and packs 250 mg of calcium into a half-cup serving.
Yield: 4 servings
Ingredients:
3 cucumbers
2 c plain, low or nonfat yogurt
4 cloves chopped garlic
1 T chopped fresh dill
1 T chopped fresh parsley
1 t chopped fresh mint
2 T olive oil
Crackers, to serve
Preparation:
1. Wash and peel cucumbers, grate them and mix into yogurt. Try using a thick yogurt, like the Greek type, to prevent the dip from becoming runny.
2. Add garlic. Sprinkle with dill, parsley and mint, and drizzle with olive oil. Serve with crackers.
