Spinach Parsley Basil Walnut Pecan Pesto & Green Beans

Yield: 15 Servings
½ cup fresh basil leaves
½ cup fresh parsley leaves
½ cup fresh spinach leaves
3 ounces of pecans, toasted and chopped
3 ounces of walnuts, toasted and chopped
½ teaspoon salt
3 ounces extra virgin olive oil
1 teaspoon fresh garlic, finely chopped
9 cups cooked green beans, drained well
1. Put basil, parsley, spinach, pecans, walnuts and salt in food processor and make a coarse purée.
2. Add oil and garlic to mixture and combine until well incorporated.
3. Toss mixture with cooked green beans and serve.
Nutrition Facts Per Serving: (1/2 cup): 150 calories, 14 g total fat, 1.5 g saturated fat, 70 mg sodium, 3 g fiber, 1 g sugars, 3 g protein, 0 mg cholesterol, 7 g carbohydrate
